Aren’t sorghum pans often rectangular with dividers like a mouse maze so you can get the trickle down/ cook down effect with the syrup?
That said, I don’t really know why you couldn’t cook sorghum like these folks are doing but I’d lean towards apple butter particularly if that’s a copper kettle.
